The Vegan Food
The vegan food is not just a plant-based menu of great food made without animal products; it’s offered as part of the all-inclusive spa concept, complementing the wellness classes by focussing on food that supports the areas that are being worked on. It’s healthy, light and fresh with plenty of superfoods, organic produce (where possible) and an effort to source things locally.
At breakfast we drank shots of the daily elixir (expect lavender, chilli, goji berry, turmeric, mint, ginger lemongrass, sweet potato or coconut and cardamom) plus freshly squeezed vegetable and fruit juices. And there’s no rushing to get to the restaurant in the morning either, as you can order breakfast to be served wherever you want it; poolside vegan feast in your luxury villa to start your day?
We ate traditional Vietnamese options such as vegan pho or noodle salads but it was the pastry chef that really stole our hearts with healthy wholemeal pancakes laced with nutmeg, fluffy waffles and banana walnut muffins.
For lunch and dinner the fresh and healthy options continued. Standout dishes to try include the food-art ‘Local Vegetable Garden’ with beautiful flavours of avocado, mango, subtle chilli and caramelised ginger mixing together with pumpkin, jicama root, fresh coconut and purple basil.
The jackfruit soup was also a favourite; the intense pungent flavour from the ripe jackfruit soup which had hints of banana, melon and mango balanced by the meaty savoury mushroom filled wonton dumpling.
