Viceroy Bali
Viceroy Bali is a family owned luxury resort perched on the hillside above the lush and verdant Valley of the Kings. Being just a five minute drive from the cultural heart of Ubud it allows guests to explore everything that the area has to offer, yet retreat to what is surely one of the most luxurious resorts on the tropical island of Bali. With 40 private pool villas offering sweeping jungle and valley views, this award winning resort combines Balinese charm and contemporary design with refined and exceptional service from a staff team that are clearly proud and passionate about where they work. The calm that greeted us upon arrival was immediate, as we were welcomed into this haven of tropical luxury. Throughout our stay, it was clear to see why they have recently been awarded the coveted one MICHELIN Key as we experienced why Viceroy Bali remains one of the most elegant and intimate resorts in the region, delivering world class accommodation and service, whilst preserving an authentic sense of Balinese hospitality.

Our Villa at Viceroy Bali
Our delightful home for a few days was a Deluxe Terrace Villa that offered complete privacy and captivating views of the tree lined valley below. The space was both luxuriously grand yet comfortably homely, with traditional Balinese accents woven into the modern and stylish interior. Expansive glass doors opened onto our private terrace, where a traditional Indonesian balé seating area overlooked the heated infinity pool which appeared to merge seamlessly with the jungle beyond. Back inside, the large marble bathroom featured a deep soaking tub and a rain shower, whilst the sumptuous bed with crisp linens ensured a perfect night’s sleep. The luxury amenities, the espresso machine and evening turndown service were all very welcome and thoughtful touches, further enhancing our stay. Sunrise was our favourite time to sit and contemplate outside, listening to the surrounding valley coming alive with birdsong and the sounds of nature, creating the picture perfect backdrop and preparing us for another wonderful day ahead.

The Vegan Food at Viceroy Bali
From the panoramic valley views that our poolside terrace offered, our days continued with more of those wonderful views, this time from Cascades Restaurant, where the soft morning light provided an idyllic setting for our plant based breakfast. The dedicated team were well informed about vegan dining, with options upon the main menu and also a separate vegan breakfast menu that was available on request. We enjoyed freshly baked bread served with homemade jams, tropical fruit juices and herbal teas before feasting on tofu scramble that tasted just as good as it looked and local breakfast favourites including nasi goreng and mie goreng which were both served with tofu and tempeh. The vegan pancakes (yes, there were vegan pancakes) came with maple syrup and coconut cream and just when we thought that our vegan breakfast at Viceroy Bali couldn’t get any better we discovered the vegan French toast which was naughty but nice. There were plenty of plant based options available but we made sure to order the tofu scramble and the vegan French toast again on our final day as they were both oh so good.

We were blessed to once again enjoy that unique Viceroy view from CasCades during our lunch. We were also able to enjoy more of that attentive and welcoming service from the excellent team. Combine this with an a la carte menu with vegetarian and vegan options and lunch was looking to be memorable. When choosing from the main menu and asking about the vegan options we were offered an all vegan menu to choose from also, this put an extra smile on our face especially when we spotted the vegan chocolate cake option for dessert. First up was the Green Mango and Papaya Salad, a vibrant mix of pomelo, mint, coriander, long beans, fried shallots and peanuts. Fresh, healthy and full of texture, this fusion salad was the perfect start to our meal. The Trio of Dips arrived next, featuring hummus topped with crunchy chickpeas, smoky babaganoush with slivers of eggplant, and flavour packed romesco crowned with sweet peppers, all served with soft, pillowy pitta bread, an excellent combo indeed. The Truffle Mushroom Risotto was excellent, creamy from coconut milk and rich with earthy mushroom flavours, showing that CasCades’ chefs truly understand how to create indulgent vegan comfort food. We ended with the Chocolate Cake, served with macerated berries, cacao nib praline and coconut sorbet, decadent, balanced, and the perfect finale to a memorable vegan lunch.

Vegan Fine Dining at Apéritif
We were genuinely excited about our seven course vegan fine dining experience at Apéritif, regarded by many as one of Bali’s finest restaurants. The elegant setting, attentive staff and exquisite food make it a true destination dining experience that left us eager to return. The dedicated vegan tasting menu is a culinary adventure blending Indonesian inspired dishes with modern techniques and creative flavour combinations, all beautifully presented and rooted in local ingredients. Every course was introduced with confidence and care, showcasing the passion and knowledge of the entire team. Special thanks to Executive Sous Chef Jason for sharing insights into the ingredients and creative processes, also to Ms Suma for her warm hospitality throughout. From bespoke mocktails and an impressive bread trolley to hand blended teas, every detail was considered. Quite simply, this was one of the most memorable vegan fine dining experiences we’ve ever had the pleasure to enjoy.

Cooking Class at Viceroy Bali
During our stay, we joined a vegan cooking class that proved to be one of the highlights of our time at Viceroy Bali. The experience began with a private tour of the immaculate organic gardens within the resort, where Ibu Wayan proudly introduced us to a wide range of fresh herbs, fruits and vegetables that she was nurturing and caring for. Under the expert guidance of Chef Suryani and Chef Koming, we learned about each ingredient and traditional preparation methods before creating a five course veritable vegan feast using thoughtfully adapted Indonesian recipes. From pounding bumbu and slicing vegetables to preparing gado gado, tempe bakso and spiced corn fritters, every step was engaging and fun. After our hands on cooking session, the chefs beautifully plated our dishes, allowing us to sit back and enjoy the delicious results of our efforts, a truly memorable and rewarding vegan culinary experience.

The Vegan Essentials
Viceroy Bali is an example of how sustainability, responsible tourism and luxury can coexist seamlessly. The resort champions eco conscious practices by sourcing ingredients locally, reducing single use plastics, and supporting community education and charity initiatives. From water filtration systems to efficient waste management, every detail demonstrates a thoughtful approach to responsible hospitality. In our Deluxe Terrace Villa, refillable bathroom amenities and filtered drinking water in glass bottles reinforced this commitment. Impressively, each department encourages team members to propose new eco initiatives weekly, ensuring continual progress and a depth of understanding throughout the team. Current goals include expanding solar panel usage, reducing overall energy consumption, introducing a carbon offset into villa rates, and educating both employees and the local community about waste management. Viceroy Bali proves that responsible travel and refined luxury can exist hand in hand, and we look forward to hearing more about how their sustainability goals become reality.
